Things You'll Need:
- 3/4 c. all-purpose flour
- 3/4 c. whole-wheat flour
- 2 tbs. baking powder
- 2 5 oz. cans tuna packed in water
- 1/2 c. plain nonfat yogurt
- 1/2 c. diced onions
- 1/4 c. diced pickles
- 1 egg
- 3/4 c. skim milk
- 1/3 c. canola oil
- salt
- lemon pepper
- garlic powder

Step 1
Preheat your oven to 375. In a medium bowl, stir together the flour and baking powder. Add in tuna, yogurt, onions and pickles. Stir well after each addition.

Next, in a seperate bowl, whisk together the egg, milk and oil. Add the egg mixture to the tuna salad. Again, combine well. Season to taste with salt, lemon pepper and garlic powder.

Line your muffin tins with paper or foil liners. Carefully spoon the tuna salad into the wells of your muffin tins. Be sure to clean up any spills on the sides or it will burn.

Bake for 20 to 25 minutes or until lightly browned. Remove your tuna salad muffins from the oven and let cool slightly before serving or storing. This unique tuna salad recipe is sure to be a hit with any crowd!
