This is a heart healthy meatloaf recipe that uses simple substitutions to cut calories and fat while maximizing taste and nutritional value.

Instructions

Things You'll Need:

  • 1 medium onion
  • 1 tbs. butter
  • 1 lb. ground beef
  • 1 lb. ground turkey
  • 1 c. water
  • 1/4 c. fat-free Italian dressing
  • 1/4 c. ketchup
  • 2 egg whites
  • 1 c. quick-cooking oatmeal
  • 1/4 cup ground flaxseed
  • salt
  • pepper
  1. Step 1

    Melt the butter in a medium skillet. Dice the onion and sauté until very tender.

  2. Step 2

    In a large bowl combine the ground beef, ground turkey and onion. Once the meat and onion is combined well, add the water, Italian dressing and ketchup. Slightly beat the eggs and add to the meat mixture.

  3. Step 3

    Next, add in the oatmeal and flaxseed. Continue mixing, using your hands if necessary to get the ingredients evenly combined. Season with salt and pepper.

  4. Step 4

    Shape your meatloaf into two small loafs or one large loaf. Bake at 375 for 1 hour.

  5. Step 5

    After an hour, remove it from the oven and slice through the middle of your meatloaf to check for doneness. If there is any pink, put it back into the oven for an additional 5 to 10 minutes.

  6. Step 6

    Once there is no pink, rest othe meatloaf on paper towels or a wire rack for about 10 minutes before serving. This is one meatloaf recipe that you can feel good about making for your family. The addition of oatmeal and flaxseed makes it a nutritional powerhouse!

Tips & Warnings
  • Tips for Weightloss: Use cooking spray instead of butter to sauté the onions. Substitute low-fat ground turkey for the ground beef. Pat the whole meatloaf with paper towels after cooking to reduce the fat content even more.
