Heart warming shrimp wonton with Oriental vegetables in a soup. Great addition to your lunch or dinner, or have it itself as a snack.

Instructions

Things You'll Need:

  • 1/2 cup finely diced shiitake or straw mushrooms (plus 3/4 cup whole, reserved)
  • 4 tablespoons diced onion
  • 1 teaspoon minced garlic
  • 1 beaten egg
  • 1 tablespoon soy sauce
  • 1 pound roasted, shredded pork (reserve 3-6 tablespoons)
  • One can (about 14.5 ounce) diced shrimp
  • 1/8 teaspoon fish sauce (optional)
  • 6 cups water
  • Around 30 wonton wrappers
  • 8 cups chicken stock
  • 1/2 cup sliced water chestnuts (optional)
  • 1/4 cup bamboo shoots
  • 8-10 snow pea pods, cut in half and strings removed
  • 1/4 lb fresh jumbo shrimp, peeled, de-veined, and halved
  • 1 cup shredded spinach leaves
  • 3 sliced green onions
  1. Step 1

    Combine these ingredients and mix well: mushrooms, onion, garlic, egg, soy sauce, pork, canned shrimp, and fish sauce (optional).

  2. Step 2

    Place one teaspoon of mixture onto each won ton wrapper. Try placing mixture somewhat off to one side, so the wrapper will fold better.

  3. Step 3

    With the wrapper in the palm of your hand, make a roll-over towards the opposite angle, the rolling point should be tucked under the filling for weight.

  4. Step 4

    Moisten one of the side points with a some water. Bring both the left side and right points together, overlapping each other. Press and pinch to seal.

  5. Step 5

    In a stock pot, bring water to a boil. Once water is boiling, gently drop wontons in, one by one. Cook uncovered, about 5 minutes. Drain water in the stock pot and reserve.

    Transfer wontons with a slotted spoon to a saucepan filled with cold water for 2 to 3 minutes, then drain.

  6. Step 6

    Heat chicken stock to boiling in the stock pot that used to cook the wonton. Add reserved pork and mushrooms, shrimp, bamboo shoots, water chestnuts, and snow peas. Simmer uncovered for 5-7 minutes. Add spinach in last minute of simmering.

    Ladle soup into bowls then sprinkle green onions. Serve hot. For 4-6 persons.

Tips & Warnings
  • You can find wonton wrappers in most frozen food isles in your local supermarket or Asian/International grocery stores.
