I searched all over the Internet for how to make bread pudding in an automatic breadmaker. Since I could not find one, I experimented and came up with this delicious, Brioche bread pudding recipe for the Breadman Breadmaker.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 3 Medium eggs
  • 1/2 Cup sugar (or more to your taste)
  • 3/4 Teaspoon nutmeg
  • 1/2 Teaspoon cinnamon
  • 1 1/2 Teaspoons vanilla flavoring
  • 1/8 Teaspoon lemon flavoring
  • 1/4 Teaspoon cream of tartar
  • 1/2 stick butter, melted
  • Enough milk to make 24 ounces total with the egg mixture

This recipe is best with a dense textured egg bread. You may want to add a little more sugar to the recipe. Do the same with the spices.

In a large measuring cup, combine eggs, sugar and spices. Beat or whisk the eggs and sugar mixture together until smooth, then add the vanilla and lemon flavorings, cream of tartar and melted butter. Continue beating until smooth.

  3. Step 3

Add enough milk to make 24 ounces to the egg mixture, beating until all is mixed. Cut the Brioche into small squares and place in a mixing bowl. Pour egg mixture over bread and allow to soak for at least 1 hour.

  4. Step 4

When the bread has taken up most of the liquid, stir lightly to make sure the liquid has coated every piece. Place the bread into your Breadman Breadmaker pan. Use the "Bake" setting and set the timer it 1 hour and 10 minutes. Immediately remove the loaf of bread pudding from the bread pan when the timer goes off. Slide it onto a plate or suitable serving dish. Allow to cool a bit but serve warm.

It has a crispy crust with a moist inside. It is just moist enough to slice without crumbling, Great served with fresh berries and whipped cream. Or try Bourbon Sauce.

  6. Step 6

Bread pudding is wonderful comfort food.

Tips & Warnings
  • Use a heavy textured bread.
  • Experiment by adding nuts and raisins
  • Stale bread works best.
  • If you have a different type of breadmaker, check your instruction manual or its website before using for this recipe.
