Things You'll Need:
- 1 bison rib eye steak
- Sea salt
- Fresh ground coarse black pepper
- 1 tbsp. olive oil
- Gas or charcoal grill, ready to cook
- 1 tbsp. finely diced garlic
- Grilling tools
- Plate

Step 1
Pick bison rib eye steaks that are fat, thick and have a small amount of fat on the edges. If they are frozen, place in the refrigerator 24 hours before preparation in order for them to thaw. If they are fresh and not frozen, place the steak in the refrigerator until you are ready to use.

Preheat the grill on medium to high for at least 5 minutes before putting the bison rib eye steak on the grilling grates.

Place the steak on a plate. Liberally coat each side of the steak with 1/2 tablespoon olive oil, rubbing it gently into the flesh.

Coat each side with a combination of the pepper, sea salt and diced garlic. Rub this mixture into the steaks liberally.

Place the steak on the grill and don't touch it for at least 3 minutes. At 5 minutes, flip it over to the other side. Cook this side for 3 to 4 minutes, then remove from grill.

Place the steak onto a clean plate and let it sit covered in tinfoil for at least 8 minutes. Serve and enjoy.
