How to Use a Pressure Cooker to Cook Beans

A pressure cooker is a blessing if you want to cook dried beans in a hurry. Instead of having to presoak and spend hours cooking the beans on the stovetop, a pressure cooker lets you go from bag to fully cooked in about an hour. Almost any type of dried bean can be cooked in a pressure cooker. Soybeans are an exception as they produce heavy foaming when cooked, which can cause problems by plugging the vent hole.   • 1 pound dried beans
  • Colander
  • Pressure cooker
  • Water (or stock)

Instructions

      Prepare the beans by sifting them through your fingers over a colander to remove any foreign material. Occasionally a pebble or clump of dirt may find its way into a bag of dried beans.

      Rinse the beans in cold water and place into the pressure cooker.

      Add any spices you want in your beans.

      Fill the pressure cooker with water to the fill line marked inside the pot.

      Place the lid of the pressure cooker on the pot and lock it in place.

      Place the pot over medium-high heat and cook at this temperature until the pressure gauge on the lid jiggles constantly.

      Turn the heat down to medium-low and let the beans cook for 45 to 50 minutes.

      Remove the pressure cooker from the heat and allow it to cool down before opening. Do not try to force the handles open as this can cause severe burns when the steam escapes the lid.

Tips & Warnings

  • A quick way to cool the pressure cooker is to place the pot in the sink and allow cool running water to splash over the cooker. If desired, a small, meaty ham bone can be added to the beans for flavor. Lentils, split peas and other quick beans take less time to cook in a pressure cooker. They should be ready in 30 minutes or less from the time pressure is achieved in the cooker.
