How to Melt Chocolate for Fountains

A lot of people think that when they go to use chocolate fountains, all they have to do is dump a couple of Hershey bars in their bases and turn them on. However, there is a certain way to melt the chocolate beforehand so that it's thin enough for the fountain to pick it up. If you don't melt the chocolate right, instead of getting an appetizing steady stream, you'll end up with a sticky, gloppy mess.

Things You'll Need:

  1. Step 1

    Buy chocolate chips that have a large amount of cocoa butter in them so that the chocolate will be rich and creamy. Look for ones that have it listed as the first, second or third ingredient, first being best.

  2. Step 2

    Put your chocolate chips in a resealable plastic bag. Add 1/4 cup vegetable oil to the bag for each 2 1/2 pounds of chocolate. Then close the bag tightly so it won't leak. Turn it upside down to double-check the seal. If the bag is very full, you may want to add a second bag facing the opposite way of the first just to make sure.

  3. Step 3

    Put the bag in the microwave and set the machine to heat it on the highest setting for 2 to 3 minutes, depending on how hot your microwave gets. Stop the microwave at the 1-minute mark. Pick up the bag and knead the chips (basically, bunch up the bag in your hands) so that they are redistributed and get heated more evenly. Then put them back in for the rest of the time needed.

  4. Step 4

    Take the bag out of the microwave and knead it again, this time looking for any remaining solid chocolate. If there is any, put the bag back in the microwave for another 10 seconds. Repeat as needed.

Tips & Warnings
  • Once your chocolate is ready, preheat your fountain. Then trim a corner off the bag and pour it into the bottom tier. Even if the chocolate looks solid, always check with your hands before putting it back in the microwave for longer. Sometimes it holds its shape even when it's completely melted.
  • The bag can get pretty hot in the microwave. Wear oven mitts when kneading it. If your microwave is unpredictable, check your chocolate every 30 seconds after 1 minute has passed. Don't burn it; it's not a pretty sight or smell.
