Things You'll Need

  • 3 lbs. of beef eye round roast
  • 1 cup of red wine
  • 1/3 cup of red wine vinegar
  • 1 small onion finely chopped
  • 2 cups of beef broth
  • 1 tsp. of salt
  • 1 tsp. of oregano
  • 1/2 tsp. of pepper
  • Marinating dish
  • Baking dish

Instructions

      Mix together beef broth, red wine, red wine vinegar, salt, oregano, pepper and onion. Pour into a marinating dish.

      Set the roast on the marinade and spoon marinade all over the roast. Cover the roast with the marinating dish's lid or use plastic wrap.

      Store the beef round eye roast in the refrigerator overnight.

      Preheat your oven to 450 degrees.

      Place the roast on a baking dish and pour the rest of the marinade over it.

      Place the roast in the oven for 20 minutes.

      Turn the oven off. Without opening the oven, leave the roast in there for 1 hour.
