Brinkmann smokers come in a variety of styles. Brinkmann makes dome and vertical smokers, and smokers with side fire boxes. Some Brinkmann smokers use electric, and others use wood or charcoal. The following instructions are how to use the dome model as a smoker, yet they could be adapted to apply to any of the Brinkmann smokers. Cooking times will vary depending on the type of meat cooked and how many pounds are being smoked. Does this Spark an idea?

Things You'll Need

  • Brinkmann dome smoker
  • Charcoal
  • Lighter fluid
  • Matches or BBQ lighter
  • Water
  • Meat
  • Smoking wood chips (optional)

Instructions

    • 1

      Insert a drip pan under the smoker to catch any drippings or ash.

    • 2

      Remove the lid, cooking grills and water pan from the smoker and check to make sure the charcoal pan is notched on all the legs.

      Place about 9 pounds of charcoal in the charcoal pan. Douse with lighter fluid and light after a few minutes. Allow to burn for about 20 minutes.

      Return the water pan to the smoker, and make sure it is properly positioned on its support brackets.

      Fill the water pan with warm water (or marinade). Fill to 1 inch below the rim.

      Return the cooking grill to the smoker, and position it properly on its brackets.

      Place meat on the grill and close the lid.

      Add charcoal and water if necessary, checking every few hours. Wood chips can be added to the charcoal to add flavor.

Tips & Warnings

  • If your smoker is brand new, first cure it as per the instructions in your owner's manual.

  • Never use gasoline as a lighter fluid.

    first time using my brinkman coal smoker...i had coals hot and up to 200...then added my soaked wood chips. Temp dropped and never return to 200+. Where did i go wrong?
