A taste of paradise in every forkful. Sit back and let the bright flavors of lime and rum take you back to the Caribbean where life slows down and tastes combine with the easy rhythms of music, sunshine, and laughter.

Instructions

Things You'll Need:

  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 cup water
  • 1/4 cup lime juice
  • 1/4 cup light rum
  • 4 egg yolks
  • 1 Tbsp. butter
  • green food color
  • 9 inch pie shell
  • double boiler
  1. Step 1

    This is a Caribbean recipe. To make it right, you need to be in the perfect mood, mon. So put on some calypso or island reggae while you bring paradise into your kitchen.

  2. Step 2

    Combine the sugar, cornstarch and salt. Smooth it all out with a whisk or a fork and make sure there are no lumps.

  3. Step 3

    Melt the butter and beat in the egg yolks. Gradually add the eggs, water, and fresh-squeezed lime juice. Measure out the rum and back away slowly while you add it to the mix. CAUTION: Please do not lead yourself into temptation and start drinking the mix here - you won't have a pie for later.

  4. Step 4

    Fill about two inches of water into your double boiler and turn to HI. When the water is boiling, pour your pie mixture into the top part and boil it, stirring, until it is smooth. This should take 8 to 10 minutes.

  5. Step 5

    Add a couple drops of food coloring to give it a mild green color. The idea here is to be subtle. Make it nice - not Dr. Seuss.

  6. Step 6

    Cool the mixture and spoon into the pie shell. Place it in your refrigerator for a couple hours till it sets.

  7. Step 7

    Serve to your friends with mojitos. Tell them, "Yeah, back when I lived in the Caribbean, I stole this secret recipe from my neighbor while her back was turned." Which explains why you had to leave.

Tips & Warnings
  • Feel free to toss in a bit more rum. This is the Caribbean - more rum is always better.
  • For a bit more tartness, add another tablespoon of lime juice and cut some of the sugar.
  • Once again, don't drink it.
