Things You'll Need:
- silken tofu
- blender or food processor or immersion blender
- good dijon mustard
- apple cider vinegar
- salt

Step 1
Drain a block of preferably silken firm tofu in a colander or strainer over the sink. Some recommend turning a plate upside-down onto the tofu, with a small weight like a can of beans on top. (Usually 12 to 14 ounces--the Mori-Nu aseptic boxes work really well.)

Step 2
To the blender or food processor (or bowl if using an immersion blender)add 1 tsp good dijon mustard (like Grey Poupon), 1 tbsp apple cider vinegar and 1/2 tsp salt, or really to taste (though the salt also assists in preservation).

Step 3
Blend until shiny and smooth and no little lumps remain. This usually takes only a minute or two depending on the type and consistency of the tofu. Scrape down the sides as necessary.
