Things You'll Need:
- 1 big carrot
- medium white onion
- 1 celery stalk
- green peas
- 1 zucchini
- fresh sage or thyme
- olive oil
- heavy cream for cooking
- penne pasta
- grated Parmigiano cheese
- salt and pepper
- diced pancetta or prosciutto (optional)

Step 1
Put a pot of water on the fire with some salt in it. Bring it to a boil while preparing the rest.

Finely chop the carrot, the onion, the celery and the zucchini. Chop the herbs and set aside. In a sauce pan, let the veggie mix sauté with 2 tablespoon of olive oil and a pinch of salt and pepper, over medium fire, making sure they don't burn.

Add the diced pancetta or prosciutto, if you want, and let sauté as well, until the fat has changed color. Add the peas and let cook for another 3-4 minutes.

Add the cooking heavy cream, stir in all the ingredients, let simmer for a couple of minutes, taste and THEN correct with more salt and pepper as needed. let rest while cooking the pasta.

Step 5
Your pasta goes in the boiling water at this point, and it will have to be cooked al dente, drained and added to the sauce with a dash of the cooking water. Mix well and serve right away, topping with Parmigiano cheese. Buon Appetito e Buona Primavera!
