How to Make Penne with Asparagus

This penne with asparagus has a twist and a kick to it. It's healthy, satisfying and easy breezy!

Instructions

Things You'll Need:

  • 2 slices of bacon or pancetta (diced)
  • 3 cloves of garlic
  • 1/4 cup of freshly squeezed lemon juice
  • Zest of 1 lemon
  • A palm full of feta cheese
  • 3 stalks of asparagus (diced)
  • 1 tsp of thyme
  • olive oil
  • 1 box of penne pasta (mini)
  • salt and pepper to taste 1/2 container of part skim ricotta cheese
  1. Step 1

    Take a skillet over low-medium heat. Drizzle in a bit of olive oil. Now take your diced pancetta or bacon and add in. Let the bacon become as you like it. Now add in your garlic. Sauté garlic until golden. Set the skillet aside, turn off the heat.

  2. Step 2

    Now add in lemon juice, thyme and the lemon zest. Toss to coat the bacon, merging all flavors together.

  3. Step 3

    Prepare the pasta according to directions on the box. Four minutes until the penne is cooked, add the asparagus to the water.

  4. Step 4

    Take out 1 ladle full of the pasta water. Add this water to the bacon mixture. Now drain pasta and asparagus. To keep asparagus bright, place in a bowl of ice water for a few seconds.

  5. Step 5

    Add in bacon mixture to the penne and asparagus along with the feta and ricotta cheese. Toss and serve and enjoy!
