How to Make French Loin Lamb Chops
French cuisine is renowned around the world and there is understandable interest in their classic meat dishes from those who would like to replicate Gallic prowess in the kitchen. French loin lamb chops are a particular favorite; the texture from the tender lamb is moist, while the flavor from the mustard, oil, rosemary and pepper give the meat a new dimension. Things You'll Need
- Water
- Pan
- 2 tbsp. Dijon Mustard
- 1 tbsp. Virgin Olive Oil
- 1 tbsp. Fresh finely chopped rosemary or sage
- Pepper to taste
- Spoon
- Cooking brush
- 8 Lamb loin chops
- Instant-read thermometer

Pour around 1/2 inch of water into the broiling pan in preparation for the cooking process.

Mix the Dijon mustard, virgin olive oil and rosemary (or sage) and pepper in a small bowl. Toss them together a couple of times using a spoon and allow the flavors to seep into one another.

Use a small cooking brush to spread the mix, created in step 2 , onto the lamb chops. Once you have done both sides of the chops place them onto the rack in the broiler pan, around 4 inches form the broiler.

Broil the lamb chops for around seven minutes before turning and broiling for another six minutes. How long you let the chops cook is a matter of personal preference. As a reference point, an instant-read thermometer will read 130 degrees F for medium.
