      Crack open a large fresh egg and gently pour it into a small bowl. Be careful not to break the yoke

      Using a large spoon, Take out the yolk. This is the yellow part which contains all the unhealthy cholesterol. Repeat this two more times for a total of 3 egg whites.

      Cut up a piece of bell pepper and onion into small pieces. With the stove on medium/high temperature, cook the cut up peppers and onions for about 2 minutes.

      Pour the egg whites on top of the cut up peppers and onions and cook them in the pan for about 2 minutes or until they are solidified. Flip the eggs over and let them cook for about 1 more minute. Your done, ENJOY!

Tips & Warnings

  • You can use 1/2 of egg yolk for color and substance.

  • Goes great with toast (wheat toast is healthier)

  • Be careful not to break up omelet on the flip.
