Local honey lemonade may reduce pollen allergies and prevent colds. It is a refreshing cool drink in the summer, and a warming drink in the winter.

This recipe makes one eight ounce serving of warm strong lemonade. You can pour it over ice, add more water, or store it in the refrigerator in a glass container for future use. Figure about one lemon per serving and about half as much honey as lemon juice. One cup of water per lemon is a good start, and then you can add ice or water later. All portions can be adjusted to taste.

  • A lemon
  • Honey from local wildflowers
  • Water
  • Fork
  • Medium sauce pan
  • Slated spoon
  1. Step 1

    Squeeze the juice of one lemon into a pan.

    For one serving it is easy to cut the lemon in half and use a fork by twisting it into the lemon to squeeze the juice out. If you would like to use more than one lemon, an electric squeezer may be more convenient.

    Remove lemon seeds with a slated spoon.

    Add local honey so it covers the bottom of the pan--about one half the amount of lemon juice.

    After you make the lemonade once, you’ll be able to decide better how much honey you like.

    Heat the honey and lemon juice on low heat until the honey becomes liquid. Stir constantly.

    Add one cup of water. Keep stirring until the mixture is warm.

    Pour into a mug.

    Sometimes pouring down a wooden spoon makes pouring from a pan neater without dribbling.

    You can drink the lemonade warm. It will be strong.

    You can add ice or water according to taste.

Tips & Warnings
  • If you want to add more honey, warm up the mixture again to melt the honey so it mixes with the water and lemon. If you have your lemonade in a microwavable mug, just put it in the microwave for about a minute and then stir.
  • Never give honey to babies.
  • Before giving honey to young children, contact their doctor.
  • If you are pregnant or a nursing mother, contact your doctor before eating honey.
  • Contact your doctor before using local honey if you have dietary restrictions.
  • If you think the local honey is making your allergies worse, discontinue using the honey and contact your doctor.
