Chicken Parmesan is a restaurant favorite that is actually very easy to make at home. In this article I will walk you through all the steps to making this delicious dish. You can make them for someone special tonight, or you can freeze them for later!

Instructions

Things You'll Need:

  • Chicken Breasts
  • Bread Crumbs
  • Flour
  • Eggs
  • Oregano, Parsley, Basil (dry is okay but fresh is better!)
  • Salt and Pepper
  • Pancake Griddle or Large Flat Bottom Pan
  • Cutting Board
  • Knife
  • Wax Paper
  • Meat Hammer
  • Peanut Oil
  1. Step 1
     

    Prep work. Yah, sounds lame but this can save you a lot of time and aggravation later. Collect all your ingredients and tools. This is how to avoid finding out that you don't have something you need. Plug in your pancake griddle or begin heating your pan to a high-medium heat or about 350 degrees.

  2. Step 2
     

    Mix in a large or flat bottom bowl your eggs. I usually use half as many eggs as the number of breasts I intend to cook. So if you have 4 breasts in your package use 2 eggs. It's okay if you run out you can always add more.
    Stir in pepper, oregano, parsley, basil and a pinch of salt.
    Hey! Don't try to get crafty on me over there by taking out the yolks! That is the part you need! If you are trying to make this recipe more healthy you can try to bake the breasts.

  3. Step 3
     

    In a different bowl we will make the bread mixture. This consists of 1 part bread crumbs to 1 part flour. Easy enough right? Mix together on a large plate or in a flat bottom bowl. Add plenty of pepper, oregano, parsley, and basil.

  4. Step 4
     

    Ok, now the fun part. Using your knife cut away any excess fat from the chicken breasts. It's not hard to miss it's that lumpy yellow stuff. We don't want that stuff in our food!

  5. Step 5
     

    Press your hand down firmly on top of the chicken breast. Cut horizontally between your hand and the cutting board. PLEASE don't rush this step it is very easy to cut yourself! If done correctly you should now have 2 chicken breasts. Do this to all the breasts in your package.

  6. Step 6
     

    Place each breast half between a piece of wax paper. You can reuse the same piece if you like so there is less waste. With your meat hammer gently pound the breast pieces starting in the middle. Be very careful this is just to make them more flat and easy to cook. Just pound them until they are mostly flat. This step really is optional. If you don't have the tools or time you can skip this step and still end up with a tasty meal, I just find it makes it much easier to cook them.

  7. Step 7
     

    Dip the breasts in the egg mixture making sure to coat both sides. Place the wet breast in the pile of bread crumbs and press them into the chicken. It is important to get an even coating of egg on the chicken as eggs are sort of like culinary glue, they will keep the bread crumbs adhered to the chicken.

  8. Step 8
     

    Spread your peanut oil all over your cooking surface right before you put the chicken on it. Olive oil is much healthier, yes, but is begins to burn at a much lower temperature then peanut oil. Cook the breasts until they are a nice golden brown and then turn over.

  9. Step 9
     

    HAVE FUN! There are so many ways to make this recipe unique to you. I like to melt a slice of mozzarella cheese on top of my chicken and then pair it with a bit of pasta and tomato sauce. Sometimes I make a Lasagna and use the chicken as the top layer of the dish. This dish is very versatile.

Tips & Warnings
  • This will keep in your refrigerator for about 3 or 4 days after that you should freeze them.
  • Throw away any left over egg or bread crumbs mixture. DO NOT reuse they have been contaminated with raw chicken.
  • Thoroughly wash your hands when switching from raw meats to cooked ones
  • Make sure to thoroughly clean any cooking utensils that have touched raw chicken before using them on the cooked chicken to prevent contamination.
