Collard Greens are a staple in the southern family dinner. The greens are usually prepared with ham hock, bacon, pork fat back or some form of fat meat for the taste. Many health conscious consumers have cut the collard greens out of their diet because of all the fat calories. The greens themselves are a good healthy choice; it is the type of meat that is added to give them a taste that adds all the unhealthy fat. However, I have discovered a seasoning to cook collard greens in that is very healthy and above all, very tasty, fat free and cholesterol free.

Wiley's Southern Classic Seasoning for greens replaces the meat, seasoning and fat that would normally be added to the greens. The seasoning also tenderizes the greens and it takes less cooking time.

Things You'll Need

  • 3 pounds fresh collard greens
  • 1 packet Wileys Healthy Southern Classic Seasoning for greens
  • 3 cups of water

Instructions

      Farmers Market

      Shop your local farmers market for collard greens

      Tear the leaf off the stem, rinse off and stack about 4 of the leaves on top of each other.

      Roll the leaves together to form a roll and chop down the rolled up leaves to cut the greens in thin strips.

      Wash the cut up greens and drain. Place 3 cups of water in a pot and bring to a boil.

      Add ½ of the packet of uncle Wileys seasoning and stir until dissolved.
      Add collard greens to boiling seasoned water and boil for 35 minutes, turning over greens several times.

      Add the other ½ of the uncle Wileys seasoning and boil for another 20 minutes. Taste test for tenderness and cook more or less as desired.

  • Vinegar or hot sauce can be added to the greens for an extra punch of flavor.

    I will try it once. If the collard green don't taste good, back to smoked turkey.
