A spring sizzling salad is easy to accomplish with fresh spring greens and a vinegar and hot oil dressing.

Difficulty: Easy
Instructions

Things You'll Need:

  • Salad greens, leaf lettuce, fresh spinach leaves, other greens of choice
  • Bacon
  • Cider Vinegar
  • Large salad bowl
  • Radishes
  • Green onions
  • Red onion slices
  • Tomatoes, cherry or chunks
  • Feta cheese, (optional)
  • Small saucepan
  • Measuring cup
  1. Step 1

Cook the bacon till crisp and let cool. Save the bacon grease in a small cup or bowl. Break the bacon into pieces and depending on preference of large pieces or small bit, this is your choice and set aside. Clean all the lettuce and spin dry or shake off the excess liquid. Lay on a towel a few minutes to dry more throughly.

  2. Step 2

Next clean the radishes and chop a few of the tops into the salad greens if they are small and tender. Slice the red onion into slices for a final garnish on top of the salad.

Mix all the salad greens into the large bowl, add the broken bacon bits and toss well, add the tomatoes then toss lightly again, making sure they don't fall to the bottom of the bowl.

Slice the radishes into thin slices. Add to the salad bowl. Chop the green onions and place into the mix. Now you are ready to start the dressing.

  3. Step 3

The hot dressing is the final step and this should be done just before serving, since the heat of the liquid will wilt down the salad quickly. But it also adds the great flavor to the salad. Bring about 3 tablespoons of the bacon grease and a tablespoon of the vinegar to the sauce pan. Heat this pan till bubbly and when fully heated, pour directly over the greens in the bowl and toss lightly. Sprinkle a little black pepper on top and lay the red onion slices in a ring to the center of the bowl. Serve immediately. Use more liquid if the salad is a large one.

Tips & Warnings
  • This is traditonally called Wilted Lettuce Salad, but since some might think it is not fresh we just call it spring salad among strangers.
  • Serve with fresh cottage cheese if available, homemade cottage cheese is great but hard to make if you don't have fresh milk, so store bought is fine.
  • Serve fresh porkchops as a main dish with this spring salad for a really great spring meal.
  • Watch out as you heat the oil and vinegar so it doesn't pop hot grease on your hands or arms. Remember water and oil don't like to mix it up generally.
