Things You'll Need:
- 1 cup semi-sweet chocolate chips
- 1/4 cup bittersweet dark chocolate, chopped
- 1/2 cup butter (1 stick)
- 1 cup all purpose flour
- 3 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons instant Amaretto coffee
- 1 tablespoon Kahlua liqueur (optional)
- 1-1/4 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- Confectioner's sugar for dusting, optional
-
Step 1
Preheat oven to 350 degrees F.
Melt the chocolate and butter over a double boiler and stir until smooth. Then remove from heat; set aside. -
Step 2
Sift together the flour, baking powder, cocoa powder, Amaretto and salt in a large bowl.
In another mixing bowl and using a mixer, beat egg, sugar and vanilla on medium-high speed until light colored, about 3 minutes. -
Step 3
Beat in the chocolate made in Step 1 until well combined. Slowly add the flour mixture into the egg mixture until blended. Stir in the Kahlua liqueur.
Note: leave it like this if you like your brownies a chewy. If you love a more firm (cake-like texture) then beat the mixture for another 1 minute, this is to aerate it further. -
Step 4
Grease a 11" x 7" non-stick baking pan. Pour the flour mixture into the baking pan. Bake at 350 degrees F for 32-35 minutes or until a toothpick inserted in the center comes out clean.
-
Step 5
Chewy Amaretto browniesRemove and cool on rack to room temperature, approximately 50 minutes. The baked mixture must be cool to allow clean cuts. Cut into rectangles (about 10). Dust with confectioner's sugar before serving.
Variation note: you can use instant Espresso, Cappuccino for Amaretto coffee, or any other flavored varieties.
