Things You'll Need:
- Round Roast or Rump Roast
- 1 bottle Italian Dressing
- 1 can beef broth
- Baking dish
- Large bowl, or gallon size ziplock bag
- cooking oil
- Tin foil

Step 1
Take your rump roast out of the packaging and place in gallon sized ziplock bag, or large bowl.

Now you need to get the oil out of the Italian dressing.
Let the Italian dressing settle, leaving the oil on top. Gently tip the dressing and pour out the oil until the "dressing" part comes to the end. Stand bottle upright again and let settle. Repeat this process a few times until all the oil is out of the bottle. -
Step 3
Once you have your Italian dressing done, pour it into the bowl, or bag with the roast. Place in refrigerator You'll want the meat to marinate for at least a few hours. If using a ziplock bag, flip the bag over every 30 minutes or so to maximize flavor. If using a bowl, just turn the meat over with a fork. For the tastiest results, I reccommend letting the meat marinate in the dressing for a 1-2 days. Turning the meat over a few times a day.

Once your roast is done marinating. Take the roast out of the bag but be sure to SAVE THE MARINADE JUICE! DO NOT THROW IT AWAY!
Heat a skillet on medium-high with a thin layer of cooking oil. Enough to cover the bottom of the pan.
Place your roast on the skillet and let each side of the roast brown. Actually, you'll want it to almost blacken. Trust me, it won't taste burnt. -
Step 5
When you've blackened the roast, place the roast in a baking dish with sides at least a few inches high. Pour the marinade juices into the dish along with the beef broth, and a half cup of water.
Cover with tin foil and place in the oven. Bake at 300 degrees. A small roast may take 3-4 hours. A large roast may take 5-6 hours. You want to cook the meat at this lower temperature so that it is more tender, juicy, and flavorful! -

Store Italian Beef leftovers WITH JUICE in the refrigerator.

BONUS!
To make Italian Roast Beef Sandwiches: Get a Kaiser roll and cut in half. Toast in the oven with a slice of provolone OR swiss cheese on each half. Microwave left-over Italian Beef. When Kaiser is toasted and cheese is melted, put mayonnaise on Kaiser roll and then add Italian Beef. You can spoon some of the Italian Juice on the sandwich for even more flavoring.
