How to Make a Turducken

Making a turducken is not difficult but it does take time and patience, but it is worth it.

Difficulty: Moderately Challenging
Instructions

Things You'll Need:

  • Turkey at least 22 pounds
  • duck
  • chicken
  • meat thermometer
  • 2 kinds of stuffing
  • string for tying
  • olive oil
  • seasoning
  • Very large roasting pan or electric roaster
  1. Step 1

    Defrost all three of the birds, remember a turkey can take 2 to 3 days to defrost.

  3. Step 3

    Prepare stuffing: It is recommended that you make 2 different stuffings, one of them being a sausage stuffing. I made a regular herb stuffing and a sausage stuffing. But feel free to make and use what ever stuffings you like. The sausage stuffing is recommended as it will create additional juice and keep the inside of the turkey moist.

    Lay the turkey down flat breast side up and spread the sausage stuffing in the center of the turkey.

  5. Step 5

    Place the duck on top of the stuffing on the turkey. Place stuffing generously spreading it on the duck. Place the chicken flatly on top of the duck and the stuffing.

    Fold turducken up all together by pulling each side of the turkey to the center. Truss up the turducken. You can go here for instructions on how to truss. http://www.mahalo.com/How_to_Truss_a_Chicken

    You will also need to tie a few strings around the turducken along the breast to hold all the stuffing in. See picture.

  7. Step 7

    Rub olive oil over the turkey and season as you like. I just use poultry seasoning but feel free to use what ever seasoning you like. I was very generous with the seasong.

    Place the turducken in large heavy roasting pan or in an electric roaster.

    Bake at 350 degrees. You should bake it for 15 minutes per pound using the weight of the birs before they were deboned and add 45 for the stuffing. Your meat thermometer should reach 165 degrees.

    Turducken will be very heavy seek assistance to take it out of the oven and be sure not to splash out the juices.

    Remove from oven and let it set for 20 minutes before carving.

    Carve from the center of the turducken, and remove legs.

Tips & Warnings
  • Get someone to help you remove the turkey it can get really heavy.
  • This is a project that is best with 2 people for both tying up the turducken and removing it from the oven.
  • If the skin or legs are browning to quickly place a little foil on those areas.
  • The cooked Turducken is very heavy, get assistance to place it in oven or roaster and especially to remove as there will be lots of juices making it even harder to lift.
