How to Make a Potato Burrito Smothered With Cheese

I love Mexican food and Hacienda Restaurant is our favorite. Potato Burrito is one of the things I get when there. My recipe is slightly different than Hacienda' s but good. If you get to Hacienda you can try their version but until then try my potato burrito.

Difficulty: Easy
Instructions

Things You'll Need:

  • Flour tortilla shells
  • Potatoes diced (red is best)
  • 1 Onion diced
  • 2 stalks of Celery diced
  • 1 Green Pepper diced
  • Black pepper
  • Garlic powder
  • Chili peppers like Pizza hut uses
  • Nestle Trio Powder Cheese
  • 1 Tablespoon Liquid Smoke
  • 2 Tablespoons Bacon bits
  • Tomatoes diced
  1. Step 1
    wash potatoes

    First wash your potatoes. I personally like the little red ones like Hacienda uses but this time of year I don't have any.

    Dice your potatoes.

    Add Celery, green pepper and onion. Add black pepper, crushed chili peppers like Pizza Hut uses & a little garlic powder. Cook them until soft. It won't take long.

    *** add the amount of spice that suits your family

  4. Step 4
    Nestle Trio Cheese
     
    Nestle Trio Cheese

    I buy Nestle Trio powder cheese. Make the amount you want according to the directions. Add liquid smoke and a few bacon bits for flavor. Set that aside keeping it warm.

  5. Step 5

    Drain the water off and put potatoes in a warmed flour shell and roll up.

  6. Step 6

    Put the warm cheese mixture over your flour tortilla filled with potatoes. Put lots on that's the best way. And top with tomatoes.

  7. Step 7

    Serve up with chips if you have them and enjoy.

Tips & Warnings
  • I like fresh not frozen green peppers when I have them.
  • I like fresh tomatoes not canned when in season.
  • Keep cheese warm on a griddle or the dish floating in warm water.
  • This is great for vegetarians as there is no meat in it.

on 3/23/2009 Looks good and you know how much I love Hacienda...for those who don't live in Northern Indiana, that is where Hacienda originated. It now goes down to Kokomo, IN. I am not sure if it is any farther.
