Most families store ground beef in the freezer for preparing budget-friendly meals without a lot of work. This quick-cooking form of beef is relatively inexpensive and provides many meal options. The terms ground beef and hamburger meat are used interchangeably, but refer to the same product. Purchase the extra lean form with most of the fat removed. Use it to prepare dishes with the main focus on the meat. Casseroles, meat loaf, stroganoff, beef tacos, soups and spaghetti sauces use ground beef as the main ingredient. Does this Spark an idea?

  • 1 lb. ground beef
  • Potatoes
  • Onion slices
  • Carrots
  • Butter
  • Salt
  • Ground black pepper
  • Garlic powder

      Divide ground beef into one patty for each person to make "Hobo Dinners." A 1-lb. package makes four medium-sized patties or two large ones. Tear off four large sheets of aluminum foil and place flat on the countertop. Place one beef patty in the center of each foil sheet.

      Peel and slice enough potatoes for each dinner to have four or five big slices. Wash and peel four large carrots; slice them lengthwise. Peel one onion and slice into rings. Adding other vegetables such as celery or squash is optional.

      Layer the vegetables on top of the ground beef patty. Place the potatoes directly on top of the patty followed by the carrot slices. Top it off with loosely placed onion slices. Season with salt, pepper and garlic powder. Add a dash of Worcestershire sauce for a different taste. Place a small pat of butter on top of the onion slices for better browning.

      Fold the foil over and seal well. Place the wrapped dinners on a baking sheet and bake at 350 degrees Fahrenheit for approximately 45 minutes or until the meat is cooked and the vegetables are tender. Grill this dinner over medium coals for approximately 45 minutes to one hour in hot weather to avoid heating up the house with the oven. Check the potatoes and carrots to be sure they are tender before removing from the grill.

Tips & Warnings

  • Sealing the foil tightly over the dinners helps keep the steam inside making the vegetables tender.

  • Cook ground beef to a minimum of 160 degrees Fahrenheit to destroy harmful bacteria. Use a meat thermometer to be certain.
