Instructions

    • 1

Cut the chicken in bite-sized pieces. Boneless, skinless breasts work best, but use what you have on hand.

    • 2

Place a frying pan over medium heat. Add enough oil to cover the bottom of the pan. Cook the chicken chunks, turning every three to four minutes with tongs, until cooked thoroughly. The chicken should be cooked through and read 165 degrees F as measured by a meat thermometer.

    • 3

Cut up the vegetables into bite-sized pieces and set aside.

    • 4

Place a nonstick frying pan over low to medium heat. Take one tortilla and spray both sides with cooking spray. Cook for 20 to 30 seconds, and then flip to cook the other side.

    • 5

Remove the tortilla from the pan. Add the chicken, cheese and vegetables. Wrap up the ingredients in the tortilla. Top off with salsa and serve.
