This crockpot slow cooker chicken and yellow rice recipe is delicious and can be made to serve a crowd. A crockpot slow cooker can let you put it on to cook and walk away to get on with your life. This is a Cuban recipe and would be traditionally served with fried plantains and perhaps an avocado salad. For a healthier version try a green vegetable as a side dish. It is important to the flavor of this crockpot chicken recipe to use poultry with the bones, not boned.

Instructions

Things You'll Need:

  • 4 large chicken leg and thigh quarters, skin and fat removed OR 4 large chicken breasts skin removed
  • 1 large onion sliced
  • 2 cloves garlic
  • 1 can petite diced tomatoes
  • 1/2 teaspoon each ground cumin, oregano and paprika
  • salt and pepper
  • 2 cups water
  • 1 large package Vigo yellow rice mix
  • olive oil or margarine according to rice package
  • 1/2 cup sliced pimento stuffed green olives
  1. Step 1

    Place the chicken, onion, garlic, tomatoes, spices, salt and pepper and water in the crockpot slow cooker and cover with the lid.

  2. Step 2

    Turn the crockpot slow cooker to low.

  3. Step 3

    Cook your crockpot chicken for 6 to 7 hours. It will be falling off of the bone.

  4. Step 4

    If your crockpot slow cooker has a warm setting turn it to warm, otherwise leave it on low. Remove the meat. Bone the crockpot chicken and discard the bones.

  5. Step 5

    Strain the cooking juices from the crockpot slow cooker to remove any bones and the onion and discard the onion.

  6. Step 6

    Add the crockpot chicken back to the crockpot slow cooker and cover.

  7. Step 7

    Measure the juices and substitute for the amount of water called for on the yellow rice package. Add water if needed. You will probably have more than it calls for, put the excess back in the crockpot slow cooker. Cook the rice following the cooking directions on the package using the cooking juices and the sliced olives.

  8. Step 8

    Serve your crockpot slow cooker chicken and yellow rice by mounding up the rice and putting the chicken on top.

Tips & Warnings
  • traditionally green peas would be sprinkled over the top.
