  • 2 cups strawberries, washed and cut into small pieces 2 cups sugar 1 liquid pectin pouch (make sure it is for freezer jam) 2 tbsp. lemon juice 1 tsp. strawberry extract 1 tsp. vanilla extract Measuring cups 2 bowls Freezer containers Permanent Address labels

Instructions

      Wash and dry the freezer containers before you begin to make the jam. This will save you time (in case the jam begins to set).

      In a medium sized bowl, add the cut strawberries. Pour sugar over the berries and stir the mixture until the sugar is dissolved. Let it sit for 10 minutes before adding the other ingredients.

      In a separate bowl, add the pectin and lemon juice. Let it sit for 3 to 5 minutes.

      Add the pectin mixture to the berries.

      Add the strawberry and vanilla extracts and stir.

      Spoon the strawberry mixture into containers and leave 1/2-inch space at the top. Clean off the tops of the containers and add lids.

      Take an address label and affix it to the container. With a permanent marker, write the date that the jam was made.

      Keep the jam in a cool place in your kitchen for at least 24 hours.

      Place the jam in the refrigerator or in the freezer. Jam will freeze well for one year and refrigerate well for up to three weeks. Thaw the frozen jam in the refrigerator before use.
