7Up cake was seen as early as the 1960s, around the time Bundt cakes became popular and Bundt pans filled the market. This cake does best in a tube pan, like a Bundt pan, because of its dense batter. The tube helps the cake cook through the center. It also gives the cake something to cling to as it rises, because there's no leavening agent in the batter besides the 7Up. The 7Up makes this cake moist, so it doesn't need icing. Does this Spark an idea?

Things You'll Need

  • 10-inch Bundt or tube pan
  • 1 1/2 cups unsalted butter, softened
  • 2 1/2 cups sugar
  • 5 large eggs
  • 2 tsp. lemon extract
  • 3 cups all-purpose flour
  • 3/4 cups 7Up
  • Cooling rack
  • Powdered sugar for dusting
  • Small sifter
  • Cake plate

Instructions

      Place an oven rack in center position and preheat the oven to 325 degrees F.

      Grease a 10-inch Bundt or tube pan with nonstick spray or a layer of shortening and a dusting of flour, even if it's a nonstick pan.

      Cream the butter and sugar together until the mixture is light, fluffy and smooth.

      Beat the eggs into the butter mixture one at a time, mixing well after you add each egg.

      Beat the lemon extract into the mixture until combined.

      Add 1 cup of flour, then beat the batter until the flour is mostly combined. Add 1/4 cup 7Up, and beat the batter until it's mostly combined. Repeat this step until you've used up all your flour and 7Up.

      Pour your batter into your pan, and bake it for 1 hour, 15 minutes.

      Check the cake to see if it's done--it will bounce back when gently pressed. Also, a toothpick inserted into the cake should come out without any wet batter on it, though there may be some moist crumbs attached. If the cake isn't fully baked through, bake it further and keep checking it until it's done.

      Cool the cake in the pan on a rack for 15 minutes, then turn the cake out onto the rack to cool completely.

      Use a small sifter to dust the cake with powdered sugar, and serve on a cake plate.

Tips & Warnings

  • Incorrect oven temperatures can affect how your cake rises. Make sure your oven preheats to the correct temperature and that you give it ample time to preheat. Temperatures in older ovens can be off by several degrees.

  • Put your batter into the oven as soon as it's ready; the 7Up, which will give the cake its lift, will go flat the longer it sits out.

  • Turn your cake out of the pan as soon as it's cooled for at least 15 minutes. If you leave it in the pan for too long, it may stick.

  • Don't grease your pan with butter; it can bind your cake to the pan and make it harder to turn out of the pan.
