Things You'll Need:

  • 1 lb poached shrimp

  • 5 shitake mushrooms
  • 1 lb spinach
  • 3 tablespoons balsamic vinaigrette
  1. Step 1

For the first step to your shrimp salad cook bacon until very crispy in a sauté pan. Remove the bacon from pan and drain the fat reserving 1 tablespoon of the rendered bacon fat. Let bacon cool over a paper towl. Sauté the shallots, garlic, and mushrooms in the bacon fat.

  2. Step 2

Cool the sauté mushroom mixture in the refrigerate for at least one hour. Peel and cool the poached shrimp.

  3. Step 3

Chop the bacon up really fine.

  4. Step 4
