How to Make a Delicious Sausage and Chickpea Soup

This is one of my favorite recipes. It is a delicious but healthy chickpea, sausage and kale soup. It's as easy as 1 2 3.

Instructions

Things You'll Need:

  • Kale (sold in bunches)
  • Large Tomato
  • 1 Onion
  • 1 Garlic clove
  • 2 lbs of Favorite Smoked Sausage
  • 42 ounce can of Chickpeas
  • 2 cans of Chicken Broth or 2 cubes of Chicken Buillon
  • 1 tsp Salt and Pepper
  • 1 tsp thyme
  • 1 tbsp of olive Oil
  1. Step 1

    Slice your favorite sausages and the onion and mince the garlic clove.

  2. Step 2

    In a saucepan heat up 1 tbsp of olive oil over medium heat. Fry the sliced sausage, garlic and onion until the garlic and onions are brown and soft.

  3. Step 3

    Add chicken broth and chickpeas and stir. If you are using chicken bouillon: add water instead and bring to a boil. Add the bouillon cubes and stir well. Chop kale and dice tomatoes. Reduce heat to a simmer and add the tomatoes, thyme, salt, pepper and kale. Simmer for ten to fifteen minutes.

  4. Step 4

    You can add extra seasonings to what you prefer. I usually add a tsp of crushed red peppers to spice my soup up. Serve with crackers or a serving of brown rice! Enjoy!
