Things You'll Need:
- Kale (sold in bunches)
- Large Tomato
- 1 Onion
- 1 Garlic clove
- 2 lbs of Favorite Smoked Sausage
- 42 ounce can of Chickpeas
- 2 cans of Chicken Broth or 2 cubes of Chicken Buillon
- 1 tsp Salt and Pepper
- 1 tsp thyme
- 1 tbsp of olive Oil

Step 1
Slice your favorite sausages and the onion and mince the garlic clove.

In a saucepan heat up 1 tbsp of olive oil over medium heat. Fry the sliced sausage, garlic and onion until the garlic and onions are brown and soft.

Add chicken broth and chickpeas and stir. If you are using chicken bouillon: add water instead and bring to a boil. Add the bouillon cubes and stir well. Chop kale and dice tomatoes. Reduce heat to a simmer and add the tomatoes, thyme, salt, pepper and kale. Simmer for ten to fifteen minutes.

You can add extra seasonings to what you prefer. I usually add a tsp of crushed red peppers to spice my soup up. Serve with crackers or a serving of brown rice! Enjoy!
