Things You'll Need:
- 1/2 cup egg substitute
- 3/4 cup orange juice
- 1 tbsp vegetable oil
- 2 cups Raisin Bran Cereal
- 3/4 cup pitted dates chopped
- 1 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1 1/2 tsp baking soda

Step 1
Orange juiceTime to begin your first batch of orange raisin bran muffins. Pre-Heat oven to 400 degrees. While oven is heating beat egg substitute, orange juice and vegetable oil together in a medium size bowl. Stir in cereal and dates; let stand for 5 minutes.

In a large bowl, combine remaining ingredients; stir in cereal mixture just until dry ingredients are moistened. Spoon into greased or paper lined 1/2 cup muffin pan, filling cups 2/3 full.

Bake for 15 minutes or until toothpick inserted in center comes out clean. Cool slightly before removing from muffin pan. This recipe will yield a dozen orange raisin bran muffins.
I usually fix these on a Saturday or Sunday morning for breakfast and save the rest for mid-day snacks. They're also great for picnics.
