Have you ever had orange raisin bran muffins? If not then you're in for a real treat and they're easy to make too.If you're like me and do good to fix a grill cheese then you then you need it to be easy. Why not try something new and surprise the family with fresh, out of the oven orange, raisin bran muffins for breakfast?

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup egg substitute
  • 3/4 cup orange juice
  • 1 tbsp vegetable oil
  • 2 cups Raisin Bran Cereal
  • 3/4 cup pitted dates chopped
  • 1 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp baking soda
  1. Step 1

    Time to begin your first batch of orange raisin bran muffins. Pre-Heat oven to 400 degrees. While oven is heating beat egg substitute, orange juice and vegetable oil together in a medium size bowl. Stir in cereal and dates; let stand for 5 minutes.

  2. Step 2

    In a large bowl, combine remaining ingredients; stir in cereal mixture just until dry ingredients are moistened. Spoon into greased or paper lined 1/2 cup muffin pan, filling cups 2/3 full.

  3. Step 3

    Bake for 15 minutes or until toothpick inserted in center comes out clean. Cool slightly before removing from muffin pan. This recipe will yield a dozen orange raisin bran muffins.

    I usually fix these on a Saturday or Sunday morning for breakfast and save the rest for mid-day snacks. They're also great for picnics.
