Things You'll Need:
- 2 lbs. Boneless Leg of Lamb, cut into 1 inch cubes
- 2 Bell Peppers, cored, seeded and cut into 1 1/2 inch pieces
- 1 Medium Onion, peeled and cut into six wedges Tzatziki Sauce:
- 2 cups Plain Yogurt
- 1 Medium Cucumber (peeled and diced)
- 1 Clove Garlic (minced)
- 2 t. Extra Virgin Olive Oil
- 1 T. White Vinegar
- 1 T. Fresh Dill Weed (chopped)
- 1 t. Fresh Mint Leaves (chipped)
- Pinch of Salt (or to taste)

Step 1
Combine marinade ingredients in a large zip top bag, add lamb pieces and marinate for at least 3 hours (or overnight) in the refrigerator.

Remove lamb from marinade, reserving liquid.

Alternate lamb with vegetables on skewers to make kabobs, leaving a small space between each ingredient for even cooking. If using bamboo skewers, soak in water before creating kabob to prevent sticking.

Brush vegetables with reserved marinade.

Broil in oven four to five inches from heat or on outdoor grill.

Turn to ensure even cooking until lamb is thoroughly cooked, about 10 to 15 minutes.

Tzatziki Sauce:
Combine all Tzatziki Sauce ingredients and refrigerate to allow flavors to mingle. -
Step 8
Serve Souvlaki with Tzatziki Sauce, Pita Bread, and Homemade Baklava for desert. (Pita Bread and Baklava recipes are under additional resources below).

on 3/19/2009 Sounds delish and would love to try it. Unfortunately it is very hard to find lamb in my state and it is very expensive even though a lot of sheep are raised here for both meat and wool. Sadly much of the meat is shipped to the east and west coast or overseas
