Roasting a leg of lamb isn't as hard as you might think. It's worth the time and effort since it's absolutely delicious.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 4 to 6 lb leg of lamb shank
  • 6 white potatoes (peeled and cut into quarters)
  • 2 onions (peeled and cut into quarters)
  • 2 garlic cloves
  • salt and pepper
  • roasting pan
  1. Step 1

    Take the leg of lamb shank and place in a roasting pan.

  2. Step 2

    Salt and pepper the lamb. Spear the lamb and insert the garlic cloves into the roast. Place in a pre-heated 400 degree oven and cook for 1/2 hour. After the roast has browned for the 1/2 hour reduce the oven heat to 350 degrees

  3. Step 3

    Place the peeled and cut potatoes and onions into the roasting pan with the lamb. Salt and pepper the potatoes. Cover the whole roasting pan with foil if you don't have a lid for your roasting pan. Cook for 1/2 hour, uncover and turn potatoes then recover the pan. Potatoes and onions should be added to the roast approximately 1 and 1/2 hours before the roast is done.

  4. Step 4

    Cooking time for the leg of lamb is approximate and it's best if you use a meat thermometer. If you don't have one then calculate accordingly.
    For medium rare 30 to 35 min per lb or 145 degrees on meat thermometer.
    For medium 40 to 45 min per lb or 160 on meat thermometer.
    For well done 45 to 50 min per lb or 170 on meat thermometer

Tips & Warnings
  • Make sure you keep the leg of lamb roast covered (after the initial roasting time) as it will have a tendency to splatter your oven
  • traditional mint jelly is usually served with lamb
