These delicious cupcakes are an updated, gourmet version of my childhood favorite, Funny Bones. These are a must for peanut butter fans!

Instructions

Things You'll Need:

  • Chocolate cake mix(eggs, oil, milk, butter, or water may be needed, read instructions)
  • 1 3/4 peanut butter
  • 5 tbsp of softened butter
  • 1/2 cup powdered sugar
  • 6oz dark chocolate
  • 1/4 cup heavy cream
  • pastry bag
  • cupcake tin
  • electric mixer
  • sauce pan
  1. Step 1

    Preheat the oven accordingly. Then, bake chocolate cake according to instructions on the package regarding cupcakes. Remove from oven and cool.

  2. Step 2

    Mean while, blend softened butter, peanut butter and sugar. Taste and add additional sugar to achieve desired sweetness.

  3. Step 3

    Once cupcakes have cooled, fill pastry bag fitted with a large tip with peanut butter mixture. Hold the bottom of cupcake and insert pasty tip in the center of cupcake. Squeeze pastry bag slowly until the cup cake begins to swell. Repeat until all the cupcake have been filled an set aside.

  4. Step 4

    In a saucepan, bring cream to a low simmer. Remove from heat and stir in chocolate, broken into pieces.

  5. Step 5

    Stir chocolate until completely melted and has a smooth and creamy texture.

  6. Step 6

    Dip the top of each cupcake twice for optimal coverage in chocolate ganache. Let the cupcakes stand for several minutes.

  7. Step 7

    Use the pastry bag to decorate the top of the cupcake with the remaining peanut butter. Squeeze a small amount in a slow circular motion, directly in the center. This will help conceal imperfections left by stuffing the cupcakes.

Tips & Warnings
  • Devils food cake work best for this recipe.
  • Peanut allergies are affect nearly 1.5 million people in the US, many of whom are children. Consider substituting sunflower butter if serving to a large group or in a school.
