Things You'll Need:
- 2 cups whole wheat flour
- 1 1/2 cups natural chunky apple sauce
- 1 3/4 cup skim milk
- 2 eggs
- Pure vanilla extract
- 1 tsp baking soda
- 1 tsp salt
- large mixing bowl
- whisk
- skillet
- pecans (optional)
- butter

Step 1
Combine whole wheat flour, baking soda and salt in a large mixing bowl. Add apple sauce, milk, vanilla extract, and eggs to dry ingredients and whisk for 1 minute. Avoid over mixing batter. Over mixing can cause pancakes to be to heavy. Some lumps should remain.

Step 2
Heat skillet over medium setting. Place small pad of butter on hot skillet and ladle batter into 4 inch circles.

Let cook until bubbles appear in the center. Add pecans if desired. Flip pancakes once and cook for 1 minute longer. Remove from pan.

Step 4
Serve pancakes immediately with fresh fruit, preserves, apple butter or a very light dusting of powdered sugar instead of maple syrup, which is high in calories and sugar.
