How to make Soft and Chewy Molasses Cookies

These are delicious soft and chewy molasses cookies. It is very hard to have just one of these cookies and friends will think you bought them from a bakery.

Instructions

Things You'll Need:

  • 1/2 cup butter, softened
  • 1/2 cup solid shortening (not butter)
  • 1-1/2 cup brown sugar
  • 1/2 cup molasses (black strap rather than mild)
  • 2 eggs, lightly beaten
  • 4 cups of flour
  • 1/2 tsp salt
  • 2-1/4 tsp baking soda
  • 2/1/4 tsp ground ginger
  • 1 tsp ground cloves
  • 1-1/2 tsp ground cinnamon
  • 1/2 cup white sugar for rolling cookies in

    Preheat oven to 350 degrees

  2. Step 2

    In a large mixing bowl, cream together butter, shortening and sugar until light colored and fluffy.

  3. Step 3

    Beat in molasses and eggs. Set this mixture aside.

  4. Step 4

    In another large bowl, combine flour, salt, baking soda, ginger, cloves, and cinnamon. Blend thoroughly with wire whisk.

  5. Step 5

    Gradually mix flour mixture into creamed ingredients until the dough is blended and smooth.

  6. Step 6

    Roll dough into 1-1/2 inch balls. Roll in white sugar, place 2-1/2 inches apart on greased cookie sheet. This is what makes them look like they came from a bakery. When you roll the cookies into balls they will crack on the tops when they bake and flatten.

  7. Step 7

    Bake for 11 minutes at 350 degrees. Do not over bake. Take out and let sit on the pan for a couple of minutes before transferring them to a cooling rack.

Tips & Warnings
  • Sift the ground cloves so you don't have clumps of cloves in your cookies.
  • Place dough in the refrigerator until cool if time allows so that the cookies don't spread as much in the oven.
  • Make sure to use the half shortening and half butter or the cookies will spread too thin while baking.
