Things You'll Need:
- 2 large, fresh shiitake mushrooms, stems removed and coarsley chopped
- 17-ounce can chestnuts in water, drained and coarsely chopped
- 3 scallions, green and white portions, sliced
- 1 cup long grain rice
- 2 cups water
- 2 tablespoons sake

Considered by many one of the best times of the year this dish is great enjoyed in the fall.Being that Shiitake mushrooms, and chestnuts are in peak season then , this is a ideal dish for that season.First of all in a three-quart saucepan , combine all ingredients, reserving one scallion for garnish.

Bring it all to a boil over moderate heat, as you stir. Then cover and turn down the heat to low.By now the aromatic smell of the shiitake mushrooms, probably have you good and hungry.

Simmer for about 20 minutes. Then remove from the heat and allow to sit for 10 minutes, before you remove the lid.Please be careful when you do remove the lid , trying not to be burned by the steam.

Fluff rice with a fork, and spoon it all into bowls, then garnish with the remaining scallion. And your done. =^.^= Enjoy.
This dish is pretty easy to make and is great enjoyed in the fall.
