How to Make Whole Wheat Banana Bread

Whole wheat banana bread is a delicious, healthy alternative to the traditional version. This one uses heart-healthy canola oil and high-fiber whole wheat flour rather than butter and white flour. This can be converted to a vegan recipe by omitting the eggs. This banana bread recipe has been in our family for over twenty years and is a favorite with kids of all ages!

Instructions

Things You'll Need:

  • 3 very ripe bananas
  • 1/3 C canola oil
  • 1/2 C brown sugar
  • 2 eggs, beaten
  • 1 3/4 C whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 C hot water
  1. Step 1

    Beat canola oil and brown sugar together in a large mixing bowl. Add beaten eggs and mix well.

  2. Step 2

    Mash ripe bananas with a fork or other tool until smooth and blend with the oil and sugar mixture.

    Add sifted dry ingredients alternating portions with hot water as you blend together. Mix until smooth.

    Bake in greased 9x5x3 glass or metal loaf pan at 325 degrees for 55 to 60 minutes. Banana bread is finished when toothpick inserted in the middle comes out clean.

    Cool on wire rack for 1/2 hour and then remove from pan. Allow to cool a bit longer before slicing with a bread knife. Now you're ready to enjoy your fresh, delicious whole wheat banana bread - especially tasty right from the oven!

Tips & Warnings
  • You may add 1/2 C chopped nuts if desired.
  • You may make this a vegan recipe by omitting the eggs. Just add 1/2 banana or any egg substitute you wish.
  • Adjust baking time according to type of pan used. Glass takes about 5 minutes longer.
