Things You'll Need:
- (For the Broccoli Cheese Soup)
- 1 bunch broccoli, washed and trimmed
- 2 cups sliced onions
- 5 tablespoons butter or margarine
- 7 cups chicken broth, divided
- 1 teaspoon dried oregano, crumbled
- 1/4 cup flour
- 2 tablespoons Dijon mustard
- 1/8 teaspoon pepper
- 1 cup milk
- 2 cups shredded sharp Cheddar cheese
- (For the Chicken Marsala)
- 6 tablespoons butter or margarine
- 8 slices cooked turkey breast, each about 1/4-inch thick
- Black pepper, to taste
- 8 thin slices of prosciutto or ham
- 8 slices Mozzarella cheese
- 2 cups sliced mushrooms
- 1/2 cup Marsala wine
- Freshly chopped parsley, optional

Step 1

Cut florets off stalks. Save the stalks. Toss the florets in boiling water with a pinch of salt. Boil for 2 minutes then drain and immerse in cold water to stop cooking. Set aside.
While the florets are boiling, cut the stalks into small pieces. -
Step 2
Over medium heat, place the broccoli stalks in a large saucepan with 3 tablespoons of butter or margarine. Add onions, saute over for 4-5 minutes. Add organo and 3 cups chicken broth and oregano to the saucepan. Turn heat down to low, simmer 25 to 30 minutes.

Slowly and carefully process hot mixture from the skillet in batches in a blender until smooth.

Melt remaining butter or margarine in a saucepan over medium-low. Stir in flour, stirring constantly, cook until smooth and bubbly. Stir in pepper and mustard.

Broccoli cheese soupStir in the processed mixture and remaining cups of chicken broth. Cook, stirring, until soup begins to bubble. Add cheese and milk; blend well until smooth. Add broccoli florets from Step 1 and cook through.

Chicken marsala- - Chicken Marsala - -
In a large skillet over medium-high heat, add 4 tablespoons butter. Saute chicken slices until brown on both sides. Remove and put chicken slices from heat and put on paper towels to drain. -
Step 7
Return chicken to the pan. Add in the mushrooms. Sprinkle pepper to taste. Put a slice of cheese and a slice of ham on each slice of chicken. Pour wine over all chicken slices.
Cover and cook for 5-6 minutes or until cheese is melted. Before serving, sprinkle with chopped parsley. Enjoy the chicken Marsala with broccoli cheese soup and/or cooked rice. Serves 4. -

Variation note: for a healthier, less greasy version, use turkey breast (same portion as chicken) instead of chicken meat for the Marsala plate.
