New York Strip Steak is one of the tastiest cuts of meat out there. Basically it is the larger part of a t-bone steak. A traditional New York Steak has the bone in, but the T part of the bone and the tenderloin (the small part) is cut off. A strip is with the bone removed, so it is just the meat.       Buy your meat. A popular trend lately is mail order steaks. These are steaks that you order online or through catalogs. Usually there is a guarantee of quality and freshness so you will often get better meat this way that in the stores. Weather you do mail order steaks or not, make sure you have fresh meat.

      Season the meat. A New York strip steak is a really tasty cut of meat on its own, so don't over season it. Otherwise you may be cooking a slice of chuck roast. It is best to just salt and pepper it. Garlic is acceptable as well.

      This is the part not everyone likes, but it is important to a good tasting steak. Let it sit out at room temperature for 30-60 minutes so it can soak up the seasonings. This will result in a more tender steak also. Mail order steaks should be defrosted in the refrigerator prior to this step.

      Fire up the grill or the pan. Do not attempt to cook this one in the oven. An oven baked steak just won't come out right.       Flip it. You only ever want to flip it once. If you know how to cook any steak, you know this, however if you are set on having the fancy grill pattern, carefully turn it half way through cooking instead of doing extra flipping.

      Now this is the tricky part. When is it done? Make a fist with one hand and tuck your thumb inside you fist. If you squeeze tight and then press on the muscle at the base of your thumb it will be pretty hard. This is well done. If you let your hand go limp and press the muscle, this is rare. If you find a middle tension, this is medium. Find medium-rare and medium-well respectively.

      If this is too much, use a meat thermometer. Steak is medium at 160 degrees.

      Let it rest for about 5 minutes before you eat it.
