Preparing an easy and delicious corned beef dinner for St. Patrick's Day doesn't have to be a chore when one uses a Crockpot. This corned beef and cabbage recipe for the slow cooker is a one pot meal that is satisfying and has good flavor. Do you have children? Instructions

Things You'll Need:

  • Crock pot
  • 3-4 lb corned beef round
  • 4 large red potatoes (unpeeled), cut into chunks
  • 1 large red onion, cut into chunks
  • 1 small head green cabbage, cut into wedges
  • 4 large carrots, cut into chunks
  • 1 can (14 oz) beef broth
  • 1 cup water or dark beer
  • 4-5 cloves
  • 4-5 green or black peppercorns
  • 1 dry bay leaf
  1. Step 1

    Add a layer of onions on the bottom of the crock pot.

  2. Step 2

    Place corned beef on top of the layer of onions and place the carrots and potatoes around the beef.

  3. Step 3

    Place the wedges of cabbage on top of the corned beef roast.

  4. Step 4

    Add liquids (beef broth and beer or water) and also the spices to the corned beef mixture and vegetables in the crock pot. Cover the crock pot tightly.

  5. Step 5

    Set the slow cooker temperature to low and let it simmer away for 8-10 hours, or until done.

Tips & Warnings
  • Whenever cooking with a crock pot, never open the lid. Be patient and allow it to cook covered for at least one hour before the cooking time before checking for doneness. Every time a crock pot is opened, the internal temperature lowers and it takes several minutes to get back up to the appropriate cooking temperature.
