How to Make An Easy Banana Layer Cake With Cream Cheese Frosting
This cake has a smooth moist texture with just the right amount of banana taste. Banana cake, to me, goes perfectly with cream cheese frosting. Does this Spark an idea?
Things You'll Need
- FOR THE CAKE
- 1/2 cup butter
- 1 1/2 cup white sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1 cup mashed, very ripe, bananas
- 1 teaspoon baking soda
- 1/2 teaspoon vanilla
- FOR THE FROSTING
- 2, 8 oz packages cream cheese, the best one
- 1/4 cup butter
- 1 1/2 to 2 cups icing sugar
- 1 teaspoon vanilla

Heat oven to 350 degrees. Butter two round nine inch pans. Set out cheese and 1/4 cup butter to soften.

In a large bowl, blend together the butter and the sugar. Blend in the eggs. Beat briefly. In a separate bowl, blend together the flour, baking powder and the salt.

In another small bowl, blend together the bananas and the baking soda.

To the butter mixture, add, alternately, the flour mixture and the buttermilk, ending with the flour. Beat well after each addition. Beat in the bananas and the vanilla.

Divide the batter between the two pans and bake for approximately 40 minutes or until the cakes test done. Remove from oven and cool on racks.

When the cakes are almost cool, make the frosting. Cream together the softened cheese and the butter. Sift in the icing sugar, gradually, beating well as you add. Blend in the vanilla. Fill and frost your cake. Serve. Enjoy!
