How to Make Mexican Corn Salad

Serve this salad as a side dish at your next Mexican Fiesta. Pair with grilled chicken instead of rice. Eat it all by itself as a guilt free meal. Anyway you choose to eat it, you are sure to be pleased!

Instructions

Things You'll Need:

  • frozen corn
  • frozen pepper blend
  • salsa
  • black beans
  • canned diced tomatoes with green chilies
  • olive oil
  1. Step 1

    Heat 1 tablespoon of olive oil in a skillet on stove top.

  2. Step 2

    Measure out the amount of corn and pepper blend as needed for the amount of people eating. I used half a bag of the pepper blend and a few cups of corn.

  3. Step 3

    Break the peppers into bite size pieces. Add the corn and peppers to the oil. Sauté until heated through.

  4. Step 4

    Add the tomatoes, salsa, and beans. Sauté until all the ingredients are heated through. Continue to cook until the salad reaches the desired crispness. Be careful not to overcook or the beans and tomatoes will become mushy.

  5. Step 5

    If serving instead of rice, place grilled chicken on top of the salad. Enjoy the salad as salsa and serve with tortilla chips. Wrap in a tortilla and eat as a Mexican wrap. Add to tacos. Use your imagination and enjoy!
