Things You'll Need:

  • Sugar Water Baking soda Citric acid crystals Corn syrup (light) A candy thermometer Corn starch/powdered sugar Flavoring (ie. vanilla or fruit extracts)

    How to Make Homemade Pop Rocks

  1. Step 1

    Commercial pop rocks are made with a different process than we will use here. Commercial pop rocks are made with corn syrup, sugar, lactose, flavoring and compressed CO2 gas (The pressure of the gas is at about 600 lbs. per square inch). Since most people don't have access to compressed CO2, our pop rocks will be made in a slightly different way.

    First, assemble your ingredients. Depending on elevation and humidity, the ratio of ingredients can vary a great deal, so feel free to experiment each time you make them!

    You will need approx.:

    2 cups sugar
    1 tsp. baking soda
    1/2 cup citric acid crystals (available at gourmet food stores or on the Internet)
    a small amount of powdered sugar or corn starch
    a small amount of corn syrup
    a small amount of water
    flavoring (such as vanilla or fruit extracts)

  2. Step 2

    Combine the sugar, baking soda, water and corn syrup in a pot over medium-high heat. Combine well, and then add the citric acid crystals.

  3. Step 3

    Heat to approx. 300 degrees Fahrenheit, add the flavoring.

  4. Step 4

    Remove mixture from pot to cool. You can let it cool on a plate or a sheet pan or a silicone baking sheet that has been dusted with corn starch or powdered sugar. Let it cool in small dollops, or in a thin sheet. Once cool, smash into small pieces.

  5. Step 5

    When you put the candy in your mouth, the sugar dissolves, and the citric acid and baking soda combine, releasing CO2 and producing a fizzy sensation.

Tips & Warnings
  • Baking soda can be damaging to your teeth in large quantities, so use it sparingly. The urban legend about mixing pop rocks and Coca-Cola to make your stomach implode is impossible. You would have to eat pounds of candy to feel any damage. That being said, you could get an upset stomach, so please don't mix pop rocks with soda.
