A lemon is a versatile fruit. Its juice can be made into lemonade, used as a meat tenderizer, used as a wash to prevent other fruits from browning or used as a flavoring for recipes. Its zest, which is taken from the lemon peel by grating, is used to add flavoring to foods and recipes. Lemon oil, which is zest infused in oil, is often used to flavor lemon candy. Instructions

      Wash an unpeeled lemon. Dry it completely before proceeding to the next step.

      Peel the outer layer of the skin off using a vegetable peeler. Do not cut so deep that you dig into the white pith between the fruit and skin.

      Heat 1 cup of olive oil until just below simmering.

      Add the strips of lemon peel to the oil and leave it on the heat for about 10 minutes. Cover it and remove it from heat. Allow it to sit for several hours. The lemon flavor will infuse with the oil.

      Store it in a clean glass jar, with the lid on. Strain it before using.
