How to Make Oatmeal Cookies With M&Ms
These good-for-you oatmeal cookies have the added "grab-me-now" factor of colorful M&Ms peeking out here and there. Although almost any oatmeal cookie recipe that calls for adding nuts, raisins or chocolate chips will do, this recipe is a particularly good choice as it is a dense cookie. This recipe (which can be halved) makes about eight dozen good-sized cookies. If you like, you freeze some of the dough, and the cookies themselves freeze well in an airtight container. - ½ stick margarine, softened 1 cup sugar 1 cup light brown sugar ½ cup applesauce 2 eggs 2 tsps. vanilla 2 cup all-purpose flour 2 tsps. baking powder 1 tsp. baking soda ½ tsp. salt 2 ½ cups oats 1 ½ cups M&Ms

Use an electric mixer to combine the softened margarine and the sugars in a large bowl.

Add the applesauce, the eggs and the vanilla. Blend well until the mixture is smooth.

Mix together the flour, the baking powder, the baking soda and the salt in a separate bowl.

Alternate adding the flour mixture and the oatmeal to the sugar mixture; do this by hand. Mix well after each addition.

Stir in 1 cup M&Ms. Work carefully so you don't break the candies.

Drop the dough from teaspoons onto greased cookie sheets. Press a few additional M&Ms into tops of the cookies for decoration.

Bake at 375 degrees for 8 to 10 minutes. Let them cool on rack.

Tips & Warnings
Replace some of the M&Ms with nuts or raisins---or both.
Because of the high sugar content of these cookies they will tend to brown quickly and burn, so be careful to watch them and remove them before they get too brown.
