How to Make Curry Colcannon, a Recipe

Purist will be horrified by this. It's not an Irish dish. I've got a tiny bit of Irish in me, but around our house we eat lots of curry. In honor of St. Patrick's day I thought I'd make some colcannon, but I couldn't resist spicing it up, and was missing a few things. The fusion dish I came up with turned out pretty tasty, so I think I'll keep it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3-4 medium sized potatoes.
  • 1/4 head of red cabbage
  • 1 tbs coriander
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1/4 tsp turmuric
  • 2 tbs olive oil
  • 1/4 cup yogurt
  • Bacon Bits to taste
  1. Step 1
     

    Peal, and chop the potatoes. Cover them with water and boil until soft. This may take about 20 minutes.

  2. Step 2
     

    In the mean time chop your cabbage. Put the oil into a skillet and turn on the heat to medium. Add the Cabbage, Coriander, Cumin, and chili powder. Stir fry until the cabbage is nicely wilted.

  3. Step 3
     

    When the potatoes are soft, drain the water, and mash. Add the yogurt a little at a time. You may need to adjust the amount depending on the size of the potatoes. Then add the black pepper, the turmeric and the fried cabbage and the bacon bits. Mash everything together.

  4. Step 4
     

    Alternatively you can serve the potato and cabbage separately.

Tips & Warnings
  • Serves about 2 people without sides.
  • For the Vegitarians: I think you could go without the bacon bits easily if you don't eat pork by adding a touch of salt, and using butter instead of olive oil.
  • For the carnivores: Just use more bacon, or serve with a spicy sausage.

on 3/11/2009 So there's no meat in this? (unless you call bacon bits meat) I'll have to try this since I like coriander a lot.
