Things You'll Need:
- 5lbs Sweet potatoes
- 1 1/2 cup heavy cream
- 2 Vanilla beans
- 1 Tsp vanilla extract
- 5 Tbsp of butter
- 1 Tsp Nutmeg
- Sea Salt
- Pepper
- Tin foil
- Blender or Food Processor
- Sauce Pan

Step 1
Remove one rack and cover in tin foil. Place on lowest position in oven.
Place another rack, without tin foil, in upper position. -
Step 2
Pre-heat oven to 400 degrees.

Scrub potatoes. Then poke several holes in each with a fork to allow for venting and proper cooking.

Place potatoes directly on upper rack. Cook 55-85 minutes depending on the size of potatoes. Potatoes should be soft and tender all the way through when finished.

Allow to cool slightly, then remove skin and discard. Place potatoes directly in blender or food processor with butter and vanilla extract.

Mean while, slice vanilla beans length wise. Place in sauce pan with heavy cream and nutmeg. Bring to a simmer over low heat. Remove bean pod and scrape any vanilla seeds remaining back into cream. Then discard pods.

Pour mixture over potatoes and puree. Add salt and pepper to taste. Serve immediately or refrigerate and reheat when ready to use.
