Step 1
Get a plastic bag that is for food storage purposes. You don't want one that is too stiff or too small. I find that 1 quart, freezer bags work well. The ones with zipper type closures can be hard to use because you can't squeeze them without the top coming open. They will work if you only need to use a small amount of frosting and roll the closed top down before squeezing.

Step 2
Put your frosting into the bag. I find that if I set the bag into a small straight sided bowl or large glass, and roll the sides down to the outside of the container, it makes filling easier. The container will support the bag as you spoon the frosting into it. You have to use a frosting that will flow well and yet hold its shape on the cake. Look for recipes for decorator frosting. The Wilson company puts out some very good books on decorating, filled with good recipes and ideas. I have include a link under resources for one of their books. Only fill the bag about 1/3 to 1/2 way full and then use the twist tie to seal it closed tightly.

Step 3
Use the clean scissors to cut a small corner off the lower corner of the bag. A 1/8 inch wide cut will be good for making writing and outlines. Make a small cut first and try it out. You can always make the cut slightly larger if needed but it is very easy to make the hole too large. Just squeeze the bag to get the frosting to flow out.

on 10/14/2009 This is a great idea! I've always done it this way when I find myself out of piping bags. Thank you for the clear instructions and great article.
