Step 1
ingredients for parmesan potatoesGather your ingredients. I like to use red potatoes, mostly because they are grown in this region, and they hold their shape a bit better than russet potatoes in baking. Grated parmesan cheese is ideal, but the powdered variety will work as well. Instead of butter, I use butter spray in most of my cooking. Using butter spray will make a dish healthier, and lower in fat and calories, while maintaining the same butter flavor as its high fat counterpart.

potatoes and onionsSlice potatoes and place in baking dish that has been sprayed with non-stick cooking spray. The thickness of your slices will depend on your preference and the time you have available to bake them. I like thicker slices, but many times I don’t have the time available for them to bake to tenderness, so I slice them thin. Slice and add as much onion as you prefer. My husband likes onions much more than me, so I tend to put them all on one side of the dish.

seasonings and butter sprayAdd butter spray, salt, pepper, and garlic powder as desired, and stir the potatoes to coat.

Cover the potatoes with parmesan cheese. I like to sprinkle some cheese on first to mix in, and then leave the rest on the top. It will brown nicely in the oven, and become a bit crunchy.

Bake uncovered in a preheated, 450 degree oven, for 45 minutes to 1 hour. Remove and enjoy a healthy, low fat side dish! Here are the parmesan potatoes shown with top sirloin steak and steamed asparagus. Easy and healthy; yum!
